Provenance
Krijn Verwijs lobsters come from Canada, Scotland, Wales and our own Eastern Scheldt. Canada is a real lobster country. The bays and waters there are a perfect habitat for lobsters and crabs. Because Canada is very large, there will always be an area where it is top season for lobster fishing. And that's where you'll find Krijn Verwijs. The same goes for Europe. In this way, Krijn Verwijs can guarantee delicious fresh lobsters all year round. Likewise for crabs, which we source from the Wadden Sea, the UK and Ireland.
Cultivation and harvest
Lobsters and crabs are not cultivated, they live in natural conditions. Crabs are mostly found on rocky coasts, up to 100 metres deep. They can grow up to 25 cm long and weigh up to 4.5 kg. During the fishing season, they are caught in baskets or drag nets.
Lobsters also like a rocky sea floor. Lobster fishing takes place using lobster pots. In the Eastern Scheldt, the lobster season officially begins on the last Thursday of March and lasts until 15 July.
Processing
After being caught, the lobsters and crabs are taken to Krijn Verwijs, where they are put in a special basin containing purified water from the Eastern Scheldt. Here we mimic natural conditions so that they remain at their best. They stay here for between a few days and a few weeks before being delivered to you.
Packing
The lobsters are first wrapped in damp paper so that they do not dry out. They are then put into waxed reusable boxes, individually or together up to a maximum of 8 kg per box.

European lobster
The European lobster, usually known simply as 'Blue Lobster' because of its bluish shell. The European lobster has slightly firmer flesh and more refined flavour.

Eastern Scheldt lobster
The Eastern Scheldt lobster. This is a variant of the European lobster. As the name suggests, it is caught in the Eastern Scheldt. Thanks to a different DNA structure, the Eastern Scheldt lobster has a more refined and milder flavour.
