
Shellfish make an original starter and are an ideal way to enrich pasta, a fish soup or paella. These healthy protein sources go perfectly in a healthy dish – something today's consumers are increasingly looking for. They never get boring because there are a huge number of different varieties. And of course you’ll find them all at Krijn Verwijs. All year round and always of the highest quality.
Provenance
Our shellfish come from as many different sources as there are different varieties. For example, the famous cockles and razor clams come from the Netherlands. The popular vongole clams are sourced from Italy, as are the lupini clams. We get the white venus clam from Ireland and palourde clams from the UK. In short, for each shellfish we know where the best growing areas, seasons and growers are. And we put that knowledge to good use.
Cultivation and harvest
The cultivation of shellfish is highly season-dependent. Harvesting is carried out using traditional methods, often by hand, and is therefore also weather dependent. However, Krijn Verwijs has excellent agreements with an extensive network of growers, which means we always have ample stocks. And if something is not in stock, we do all we can to source it as quickly as possible or put forward a good alternative. In short, at Krijn Verwijs you are always assured of a wide range of shellfish.
Processing
After harvesting, the shellfish are brought to Krijn Verwijs' processing centre, where they are held in the modern dilution and purification facility. That way they remain in good condition and we can guarantee optimum quality and food safety. Generally speaking, the shellfish remain in our dilution centre for several days before they are delivered to you.
Range
Krijn Verwijs supplies the following shellfish all year round: palourdes, vongole, periwinkles, dog cockles, razor clams, clams, whelks, prairie clams, white venus clams, scallops, fasolari and lupini. Each shellfish has its own properties, structure and flavour. We will be pleased to advise you if you wish.
Packing
The shellfish are packed in net bags or in leak-proof vacuum packaging.
